Shanks are among the most flavourful parts of a lamb and your guests will fall in love with these impressive and easy-to-make Lamb Shanks. And they go great with your favourite side dish – mashed potatoes, polenta, roasted root vegetables or whatever you fancy.

Preparing these mouth watering Lamb Shanks is the ultimate “Set It and Forget It” recipe! All you need to do is sear the lamb, add the liquid and throw it in the oven for two hours.

Once you pull your Lamb Shanks out of the oven, strain all excess liquid into a saucepan and reduce it to your preferred saucy consistency. Add 1-2 tablespoons of cannabis butter and stir well. Combine your sauce with our recipe for Goat Cheese and Chive Mashed Potatoes and you’ll have a delectable meal sure to impress even the pickiest eaters!

As a general guideline, when first using cannabis extracts patients should take the lowest dose possible and wait 90 minutes for onset (and potentially longer) to determine peak effect.
Unlike inhalation, extracts are processed through the liver so the onset of effects takes longer.
A typical dose can range from 5-10mg of THC. Beginners may want to start at 1-2.5 mg of THC.

Step 1
  • Pre-heat oven to 375°F.

  • Rinse Lamb Shanks under cool water, dry and season with Salt and Pepper.

  • In an oven-ready pan, sear Lamb Shanks in hot Olive Oil.

  • Once seared on all sides, remove Lamb Shanks and set aside.

  • Add the Onion, Carrots, and Garlic to the pan and cook for 3-5 minutes.

  • Deglaze with Red Wine and allow to reduce by half.

  • Add Beef Stock, Bay Leaves, Rosemary and Thyme.

  • Add Lamb Shanks back to the liquid mixture and cover with a lid.

  • Cook in preheated oven for 2 hours.

Step 10
  • After 2 hours, remove Lamb Shanks and set aside to rest.

    1-2 Tbsp Cannabis Butter

  • Reduce the remaining liquid until it reaches a saucy consistency, then add Cannabis Butter and stir until incorporated.
